It is fairly easy to understand when the plants are ready for harvesting. The white hairs also known as pistils will begin to turn brown. When more than about 50% of the hairs have 
started to turn brown they are ready to harvest. Keep in mind that your plants will be growing 
anywhere from 2-4 months. Just checking in on the plants and understanding the different 
signs will help you determine when to harvest as every grow is different. 

To actually harvest the plant you can either cut the whole plant off at the bottom and begin to work with it from there or you can cut individual branches off. It is completely your own preference. Hang the branches up to dry and trim while it is still fresh. Do not excessively touch the plants as it will start losing THC from sticking to your fingers.
